Ingredients:
1 lb lamb, cut into bite-sized pieces
1 tablespoon fresh mint, chopped (or 1 teaspoon dried mint)
1 tablespoon fresh parsley, chopped (or 1 teaspoon dried parsley)
Salt and freshly ground black pepper
1 teaspoon ground cumin
1 teaspoon ground coriander
Optional: 1 teaspoon sumac for extra flavor

Preparation:
In a large bowl, combine the olive oil, minced garlic, mint, parsley, lemon juice, salt, pepper, cumin, coriander, paprika, and sumac (if using).
Add the lamb pieces and toss to coat evenly. Let it marinate for at least 30 minutes, or up to 2 hours for more flavor.
Skewering:
If using wooden skewers, soak them in water for about 30 minutes to prevent burning.
Thread the marinated lamb pieces onto the skewers, leaving a little space between each piece for even cooking.
Grilling:
Preheat your grill to medium-high heat.
Grill the skewers for about 8–10 minutes, turning occasionally, until the lamb is cooked to your desired level of doneness.
Serving:
Serve the lamb kebabs hot with pita bread, tzatziki sauce, and a fresh salad.
