Zucchini lasagna is a delicious and healthier alternative to traditional lasagna that uses thinly sliced zucchini in place of pasta noodles. It’s a fantastic, low-carb, gluten-free option that doesn’t skimp on flavor. Here’s a recipe to get you started:

Ingredients:

  • 4 large zucchinis, sliced into 1/8″ thick strips
  • 2 pounds ground beef
  • 24 ounces pasta sauce
  • 15 ounces of ricotta cheese
  • 1 cup Parmesan cheese, shredded
  • 1 ½ cups mozzarella cheese, shredded
  • 1 egg
  • Salt and pepper to taste
  • A small handful of fresh parsley and basil, chopped

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Brown the ground beef in a skillet over medium heat. Season with salt and pepper.
  3. Add the pasta sauce to the skillet and simmer for about 10 minutes.
  4. In a bowl, combine the ricotta cheese, Parmesan cheese, egg, and fresh herbs. Mix well.
  5. Assemble the lasagna by spreading a layer of the meat sauce at the bottom of a baking dish.
  6. Arrange a layer of zucchini strips over the sauce.
  7. Spread a layer of the cheese mixture over the zucchini.
  8. Repeat the layers until all ingredients are used, finishing with a layer of cheese.
  9. Cover with foil, and bake for 45 minutes.

Remove the foil, sprinkle the top with mozzarella cheese, and bake for an additional 15 minutes, or until the cheese is bubbly and you can cook Zucchini Lasagna in an air fryer! It’s a great way to get a deliciously crispy top layer and an evenly cooked lasagna. Here are some general steps to follow:

  1. Preheat your air fryer to the appropriate temperature, usually around 360°F (182°C).
  2. Prepare your lasagna as usual, but make sure to assemble it in a dish that fits your air fryer basket.
  3. Cook the lasagna in the air fryer for about 25–30 minutes. If your air fryer model requires it, you may need to cover the dish with foil and continue cooking for an additional 20 minutes at a lower temperature, like 280°F (138°C), to ensure it’s heated through without burning the top.
  4. Let it stand for about 10 minutes before slicing to allow the layers to set.

Remember to slice the zucchini thinly and pre-cook the slices to remove excess moisture, which is especially important when using an air fryer to prevent a soggy lasagna.
