  • 1/2 cup low-sodium chicken or beef stock
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon cornstarch
  • 1 teaspoon dried thyme
  • 1/4 cup plain Greek yogurt (as a healthier alternative to sour cream)
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions:

  1. Prepare the Spaghetti Squash:
    • Preheat your oven to 400°F (200°C).
    • Cut the spaghetti squash in half lengthwise and scoop out the seeds.
    • Place the squash halves, cut side down, on a baking sheet lined with parchment paper.
    • Bake for about 30–40 minutes, or until the squash is tender and easily shredded with a fork.
    • Once cooked, use a fork to scrape out the spaghetti-like strands and set aside.
  2. Cook the Turkey Stroganoff:
    • In a large nonstick skillet, cook the ground turkey over medium heat until no longer pink, breaking it into crumbles.
    • Add the chopped onion and sliced mushrooms to the skillet. Cook until the vegetables are tender, about 5–7 minutes.
    • Stir in the minced garlic and cook for another minute until fragrant.
    • In a small bowl, whisk together the chicken or beef stock, Worcestershire sauce, and cornstarch until smooth.
    • Pour the mixture into the skillet and bring it to a boil. Reduce the heat and let it simmer until the sauce thickens, about 2–3 minutes.
    • Stir in the dried thyme and Greek yogurt. Season with salt and pepper, to taste. Cook until heated through.
  3. Serve:
    • Divide the spaghetti squash strands among plates and top with the turkey stroganoff mixture.
    • Garnish with fresh parsley, if desired.

Instructions:

  1. Prepare the Spaghetti Squash:

    • Cut the spaghetti squash in half lengthwise and discard the seeds.
    • Spray the cut sides with avocado spray or olive oil, and season with salt, pepper, and garlic powder.
    • Place the squash halves, cut side down, in the air fryer basket.
    • Air fry at 375°F (190°C) for about 20–25 minutes, or until the squash is tender and easily shredded with a fork.
  2. Cook the Turkey Stroganoff:

    • While the squash is cooking, in a large nonstick skillet, cook the ground turkey, mushrooms, and onion over medium heat until the turkey is no longer pink, breaking it into crumbles; drain any excess fat.
    • Add the minced garlic and cook for another minute.
    • Stir in the white wine or beef stock and let it simmer for a couple of minutes.
    • Combine the cornstarch and beef stock until smooth, then add it to the pan.
    • Stir in the Worcestershire sauce, steak seasoning, and thyme. Bring to a boil and cook until thickened, about 2 minutes.
    • Reduce the heat and stir in the half-and-half cream. Heat through without boiling.
  3. Serve:

    • When the spaghetti squash is cool enough to handle, use a fork to separate the strands.
    • Serve the turkey mixture over the spaghetti squash strands.
    • If desired, sprinkle with grated Parmesan cheese and minced fresh parsley.
