Ingredients:
4 cups mixed vegetables (carrots, potatoes, bell peppers, broccoli, cauliflower, etc.
3 tablespoons ghee
2 cloves garlic, minced
1 teaspoon fresh thyme (or ½ teaspoon dried thyme)
1 teaspoon fresh rosemary (or ½ teaspoon dried rosemary)
Salt and freshly ground black pepper
Optional: 1 teaspoon smoked paprika for extra flavor

Preheat your oven to 400°F (200°C).
Wash and chop the vegetables into bite-sized pieces.
In a large bowl, combine the vegetables with ghee, minced garlic, thyme, rosemary, salt, pepper, and smoked paprika (if using).

Spread the vegetables in a single layer on a baking sheet lined with parchment paper or foil.
