Preparation:
Preheat your oven to 375°F (190°C).
In a small bowl, mix the olive oil or melted butter with minced garlic, thyme, rosemary, lemon juice, salt, pepper, and smoked paprika (if using).
Season the chicken:
Rub the mixture evenly over both sides of the chicken thighs.
Let them sit for about 15 minutes to absorb the flavors.
Searing:
Heat a large oven-safe skillet over medium-high heat.
Once hot, add a little more oil or butter if necessary, and sear the chicken thighs for 2-3 minutes on each side until they develop a nice golden-brown crust.
Baking:
Transfer the skillet to the preheated oven and bake for about 20–25 minutes, or until the internal temperature of the chicken thighs reaches 165°F (74°C).
Remove from the oven and let the chicken rest for about 5 minutes.
Serving:
Serve the chicken thighs with your favorite sides, such as roasted vegetables, quinoa, or a fresh salad.
